What are Microgreens & why do we love them?

Microgreens are baby vegetables, densely planted and harvested when they are between 7 – 10 days old.

Biological studies have confirmed that plants achieve their maximum nutrient density during the first 5 – 10 days of growth. In this period, the seedling plants are in their prime, containing all the enzymes, vitamins, minerals, proteins, DNA, RNA, bio-flavonoids, and T-cells necessary for the development of the mature vegetable. Between day 3 – 6 of growth, the B vitamin content of the microgreens increases 300% to 1500%. The entire nutrient density of a mature vegetable is contained in a mouthful - these little greens are literally overflowing with goodness! The high levels of enzymes present in the densely nutritious microgreens makes them easy to digest and assimilate in the body. This assists the body with deep cleansing, regulating and building the immune system, as well as creating and supporting healthy cells.

Health Benefits

The Hippocrates Institute charts the benefits of microgreens as follows:

  • The greatest enzyme activity is from germination up to 7 days and is 100 times greater than the enzyme content of fruits or vegetables which helps to replenish our own body’s reserve of enzymes.

  • Their carbohydrates become easier to assimilate as the starches are changed to simple sugars.

  • Their fats are changed to fatty acids which are an easily digested soluble compound.

  • Their complex protein is converted into simple amino acids, which essentially means that it is “predigested”.

  • Vitamin production is increased three to twelve times more.

  • Minerals are chelated, a natural state where they are chemically bonded to amino acids and easily assimilated by the body.

  • They have delicate cell walls so they can release nourishment easily.

  • They contain photochemical, which are plant compounds that protect against disease.

  • They contain highly active antioxidants that prevent DNA destruction and the effects of aging.

  • They contain both increased fiber (up to 300%) and water.

Micro Peas

are an abundant source of plant-based protein. They are also rich in protease inhibitors that fight certain viruses and cancer causing chemicals. Pea shoots are also useful in reducing LDL (the bad cholesterol) in the blood. They are also great source of Copper, Phosphorous, Folate, Manganese, Zinc, Niacin, Magnesium, Iron, Potassium and Choline.

IMG_1417.jpg

Sunflower micros

contain all 8 essential amino acids and are a rich source of protein (up to 30% protein content), lecithin, and Vitamin D (which is rarely found in vegetables). Their high content of trace minerals is especially beneficial for bone health, muscle and tissue toning, and healthy red blood corpuscles. These superfood microgreens contain Vitamins A, C, F, H, K, Choline, Folic Acid, Inositol, PABA, Calcium, Cobalt, Iodine, Iron Magnesium, Manganese, Phosphorous, Potassium, Selenium, Sodium, Sulphur, and Zinc.

Broccoli micros

contain sulfophane which protects cell health and prevents them from becoming malignant. Broccoli microgreens contain up to 100 times more sulfophane than the fully mature vegetable. They also stimulate the production of glutathiones, a naturally occurring enzyme that neutralises carcinogens in the body before they can damage the DNA.

Radish micros

act as an expectorant, which clears mucous from the respiratory tract and greatly nourishes the intestinal flora. However they are probably best known for their high levels of vitamin E - a strong antioxidant which helps remove free radicals that can damage cell structure. They are also high in Vitamin A, Vitamin B6, and Vitamin C.

Red Cabbage micros

have one of the highest concentrations of Vitamins C, E, K, and Beta Carotene of any microgreen. They are also a great source of Fiber, Thiamin, Folate, Riboflavin, Calcium, Magnesium, Iron, Potassium and Manganese. The purple colouring of the red cabbage signals the presence of Anthocyanins and indoles, which are cancer preventing compounds.

Micro Mustard

has a delicious spicy, mustardy (no way?!) taste and is packed full of goodness. These superfood microgreens contain Vitamins A, C, D, F, H, & K, Choline, Folic Acid, Inositol, PABA, Calcium, Cobalt, Iodine, Iron Magnesium, Manganese, Phosphorous, Potassium, Selenium, Sodium, Sulphur, and Zinc. Greatly detoxifying for the blood and liver, mustard micros support healthy digestion, blood pressure, and cholesterol levels, as well as fighting free radicals and cancerous cell production.
